Ingredients:  Makes 2 servings (2 pieces)

1/4  cup

Directions:

cook all your vegetables, either in a pan or in the oven- season to taste ( I use soy sauce, season salt, garlic, and chopped onion)

cover on Med heat until soft

smear hummus on flat bread

pile on the (cooled) veggies

add feta cheese

cut up basil leaves (roll all 4 leaves together, then slice into strips)

sprinkle on top

salt/pepper to taste

It is really good! I'd be happy to make some when you and Dad come visit this weekend. It also works great as an appetizer if cut into smaller sections. I had this for lunch AND dinner today- its that tasty and that easy :)

WOW Sam, this sounds really good. So if we want to eat both pieces, it would be about 336 calories, or have only one piece with a salad. Great job! I would try it, but don't have all the ingrediants (like the flat bread and basil). If you make your own hummus (with less oil) it really tastes good and has less calories than store bought.
