Directions:  
Chop up vegetables into bite sized pieces & put them in a large mixing bowl. Add garlic, seasoning, balsamic & oil to the veggies. Mix veggies around to thoroughly coat them. Transfer to a ceramic baking dish. Bake at 400 degrees for 90 minutes, mixing every half hour while cooking. Vegetables will cook down to about half their size. NOTE: amounts of each vegetable is the same as 1 whole vegetable, ex: 2 cups Zucchini is the same as 1 zucchini.
