Dice. onion, pepper, mushroom, and ham.

On medium, heat oil in small frying pan then add all the diced ingredients cooking for approximately 2-3 minutes

Add spinach and cook until mostly wilted

Add egg substitute, salt, pepper, and flax seed and cook till desired firmness is reached

While mixture is cooking spread cheese evenly over the center of the tortilla, leaving 1 inch border without cheese

When egg mixture is done put tortilla in microwave for 20 to 30 seconds to make more pliable and slightly melt the cheese.

Add eggs to center of tortilla and wrap as a burrito.
