Heat pan and add coconut oil
Chop vegetables
Add prepared vegetables to pan and saute
Combine egg substitute, cott. cheese, creamer in blender

Pour egg mixture over vegetables
Cover and cook for 5 min or so until top is almost dry
Sprinkle shredded cheese over top
Put under broiler for a few minutes to melt cheese
