Boil potato until tender, drain. Mash until smooth. Stir in salmon, onion and celery
using floured hands shape mixture into 16 patties. Dip patties in combined egg white and water, one at a time, then in breadcrumbs. Place on lightly oiled tray and refrigerate for 30 mins.
Preheat oven to 475 degrees F.
Bake patties uncovered for 30 minutes until golden brown.
