Crack the eggs into a bowl, add the salmon (chopped) and the water, plus some salt and the cayenne. Beat well.

Heat olive oil in skillet and saute onions until soft. Pour egg mixture over the top and cook until set on the bottom. Flip and cook until done. Squeeze lemon juice over top, to bring out the salmon flavor.
