Sautee onions in olive oil. When opaque, add sliced mushrooms and sautee.
Push aside mushrooms and onions and slap a slice of provalone onto the non stick pan. Let cook on both sides until crunchy (tastes like bacon!).
Apply mustard to romaine leafs, then add sardines, ripped up pieces of the provalone, and sprinkle the onion/mushroom mix on top.
