Ingredients:  Makes 6 servings (6 each)
1  lb.
 
1-1/2  tablespoons
 
8  ounces
 
 
1/2  lb.
 
1/4  teaspoon
 
1/4  teaspoon
 
 
1/2  cup
 
1/4  cup

Preheat oven to 350, coat an 8x8 bakind dish with cooking spray.

Cook sausage in large skillet over med-high heat until half cooked, 6-8 min, stirring occasionally. Spread over bottom of prepared baking dish. Discard any grease left in skillet.

Pour oil into same skillet, and stir in the vegetables, salt, and 1/8 tsp black pepper. Reduce heat to medium, cook, stirring occasionally until vegetables are tender and liquid evaporates, 8-10 min. Let cool for 10 minutes and arrange over sausage.

Meanwhile, in a large bowl, combine the eggs, milk, cheese, and remaining black pepper. POur over the vegetables.

Bake until eggs are set, 40-45 min. Cut into squares to serve
