Description: pepper and onion sauteed with canola oil spray-use with omelets or on sandwiches

Seed and slice pepper into medium chunks. Cut onion lengthwise and chop into medium pieces. Cut mushroom slices in chunks. Place in microwave for 2 minutes to soften. Pour off any liquid.

Spray small frying pan with canola oil and heat over medium heat. Place onions, mushrooms, & peppers in pan and saute, stirring occasionally until done. If they become dry, add another spray (away from heat) or a teaspoon of water and continue to cook.
