Melt 2 tablespoon of butter in a saute pan over medium-high heat. When butter starts to bubble, add chopped onions and saute for a few minutes until they begin to brown.

Add peas and chicken stock, bring mixture to a boil. Add a pinch of salt.

Stir peas and onions often. Cook until stock is reduced by half. Then turn off heat and add remaining butter and black pepper.
