Description: Seaweed salad with cucumber and orange. Healthy and tasty. Good source of calcium, fiber and iron, great source of iodine , Vitamin C and magnesium.
Tags: Tasty seaweed dish. Great appetizer for seafood entree.
Ingredients:  Makes 4 servings (4 bowls)

Directions:  
1/ Soak wakame seaweed for five minutes in water. Then boil five minutes. Rinse well. Chop up.
2/ Peel and cut up orange sections.
3/ Cut English cucumber in about 3 inch sections; then finely slice lengthwise. Not necessary to peel English cucumbers or organic regular cucumbers.
4/ Mix all ingredients with juice from jar of dill pickles.
5/ Put in jar with lid and refrigerate several hours, if possible. Shake several times every few hours.

May use regular cucumbers, and may add other thinly slice veggies, such as carrots, summer squash, etc. Vinegar may be substituted for pickle juice.
