Shepherd's Pie Light

1  tablespoon		Olive Oil
1/2		small onion
7-1/2  cups		baby carrots
3/4  lb.		1 & lean ground turkey
2  tablespoons		worchestershire sauce
2  tablespoons		tomato paste
1  cup		reduced fat beef broth
1  serving		frozen peas
5-1/4  cups		ore ida steam and mash red potatoes
1/2  cup		skim milk
1  tablespoon		I can't believe it's not butter light

Heat oil and saute onions & carrots until soft. Add grount turkey. Add worchestershire sauce, tomato paste, and beef broth. Reduce heat and simmer for 15 minutes. Add peas and simmer 5 more minutes. If sauce is too watery, add 1 t. cornstarch into 1/8 cup of water and add to mixture. Mash potatoes with milk and I can't believe it's not butter. Pour meat mixture into 9x13 bowl and top with mashed potatoes. Bake at 400 for 20-25 minutes.
