Thaw shrimp in a bowl of cold water.
Cut tomatoes into slices. Set aside.
Heat oil in a large skillet. Add mustard and onion seeds.
Reduce heat and add the tomatoes, spinach, ginger, garlic, chili powder, salt, and pepper. Stir-fry for 6 minutes.
Add drained shrimp to the pan. Gently stir to combine. Cover and simmer over a low heat for 9 minutes.
Transfer to serving dish. Serve hot.
