Season beef with salt, pepper, and paprika. Heat oil in a large skillet over medium-high heat. Brown beef on all sides for about 8 minutes. Transfer to a slow cooker.

Add mushrooms and shallots to the skillet. Season with salt and paprika; cook for 3 minutes. Combine broth and sour cream; pour over mushrooms. Cook for 2 minutes. Pour mixture into slow cooker over beef; mix well.

Cover and cook on low for 6 hours. Sprinkle with parsley before serving. Serve beef over egg noodles.
