Combine 2 tablespoons ground coffee and the next six ingredients and throughly rub roast on all sides.

Brew remaining coffee to make 1 cup and combine with remaining four ingredients and puree until liquefied.

Pour liquid into crockpot and place roast on top.

Cook 5 to 6 hours on low.

Remove meat and shred with two forks.
