Description: Cornbread made in the southern style with bacon, onion, cheese, and jalepeno. Made with Kodiak Cakes cornbread and egg white protein.

Directions:

Cook the bacon in a cast-iron skillet.

Remove the bacon after fully cooked and drain on paper towel, saving the grease.

Add chopped onion and diced jalapenos to the grease and caramelize.

In a bowl, combine cornbread mix, egg white protein, milk and butter.
5.Crumble the bacon into the mix, then add the onions, jalepenos and cheese. Mix briefly.

Pour mixture into cast iron skillet, which should still be warm and have some bacon grease remaining.

Bake in oven at 350 for 40 minutes until golden brown on the top and darker brown at the edges. Use a toothpick to check the middle.

Allow to cool for 20 minutes before removing and serving.

Goes well with casseroles.
