Spray large non-stick skillet with Pam or other non-fat cooking spray. Sautee onions and garlic together until the onions are translucent.

Add rice into the pan; stir until rice is slightly browned, about 2 minutes. Add salsa and chicken broth; stir until blended. Place chicken on top of the rice/onion mixture; cover and reduce heat to med-low.

Cook until the rice has absorbed the liquid and the chicken is cooked through, and juices run clear, for approximately 40-45 minutes. Sprinkle the fat free cheese over the chicken; cover and let melt another 5 minutes. Serve with additional salsa, if desired. Serves 4.
