Cook rice and onion in oil in 10-inch skillet over medium heat about 3 minutes, stirring occasionally, until rice is golden brown and onion is tender.
Stir in remaining ingredients.
Heat to boiling; reduce heat.
Cover and simmer about 30 minutes, stirring occasionally, until rice is tender.

I added a couple of dashes of cayanne pepper, a little celery, used Swanson's chicken broth in stead of water, and added a can of black beans (rinsed) after the rice was cooked, yum!
