Directions:  
Mix everything but canola oil in large microwave safe bowl. (I use a large 8-cup glass measuring pitcher.) Cover loosely with a large paper plate or wax paper and microwave on high for 3 minutes. Remove from microwave with potholders-CAUTION!!..bowl will be HOT!! Add canola oil and pulse with a stick blender to emulsify the dressing so that it will not separate. Pulse in bursts so it won't make a mess** If you use the stick blender, you can rough chop the garlic & shallots-they will pulse out.) Pour in jars and refrigerate.
