In a medium skillet, heat oil over medium-high heat. Saute onion until lightly browned, about 5 minutes. Add spinach, cover and steam, stirring occasionally to prevent burning, until wilted, about 3 minutes. Transfer mixture to a colander to remove any liquid.
In a medium bowl, combine spinach mixture, eggs, ricotta cheese, nutmeg, salt, pepper.
Place 1 tortilla in prepared pie plate. Top with one-third of the spinach and egg mixture. Repeat twice, wnding with filling on top. Sprinkle with parmesan cheese.
Bake in preheated oven (350F/180C) for 40 to 45 mintues or until eggs are set, top is lightly browned and puffed and a knife inserted in the center comes out clean
