Mix Egg Beaters and Whole Egg and add salt and pepper to taste. Set aside.
Heat non stick pan over medium heat
Chopped all veggies.
Spray the non stick pan with EVOO cooking spray. Sautee the onion, mushrooms, and turkey in the prepared pan.
Add the spinach to the pan after about five minutes.
Remove the veggies/turkey from the pan and set aside.
Clean the pan.
Respray the pan and place egg mixture in the pan. What for bubbles to form around the edge. Carefully lift the edges and tilt the pan to let the raw egg under the omelet to cook.
Flip the omelet when the botton is solid.
Add the cheese.
Add the veggies and fold the omelet.
Plate and enjoy with friends or plan on having it more than once! This thing is HUGE!
