Whip eggs in small bowl

Chop Spinach

Preheat Pan on medium

Spray with light cooking spray

Cook

Pour eggs into pan making an egg pancake

Cook on medium-high till edge of eggs turns golden brown

Sprinkle Parmesan cheese on one half of pancake

Spread chopped spinach out over Parmesan cheese

Fold pancake over spinach and Parmesan

Pour salsa over omelet
