Description: Something I cooked up after we found chicken-applesauce sausage at the farmer's market.
Ingredients:  Makes 2 servings (2 bowls)

Mince garlic, chop onion into whatever size desired (I like large strips), slice bell pepper, squashes, and sausage.

Saute garlic and onion until the onion's lookin good.

Add sausage slices and brown (this recipe assumes your sausages are pre-cooked like mine). Add the squash and peppers and saute until tender.

Toss a can of diced tomatoes over the whole thing and simmer for 15-20 minutes.

Season with your favorite spices; Italian-type seasonings work well here. You could probably serve this over some pasta or spaghetti squash too.
