Season steaks with salt and pepper. In a large skillet, saute steaks for 4 minutes on each side over high heat. Keep warm in oven at 175 degrees.
Add shallots to the skillet with 1 tablespoon of butter; cook for 5 minutes over medium heat. Add Cognac slowly and bring to a boil; allow to boil for 2 minutes. Stir in cream and remaining butter. Serve sauce over steaks.
