Sprinkle steak with salt. Heat olive oil in skillet, add steak and sear until browned, 2 min. a side. Transfer to plate.

Add garlic to skillet. Once it sizzles, add onion and peppers & cook, stir occasionally, till softened slightly, 4 min. Add pepperoncini, tomatoes, oregano, pepper flakes and 3/4 c. water, stir. Bring to rapid simmer, then nestle steak in sauce & simmer, turning once, 7 min. Place steak on cutting board & rest for 5 min. Continue simmering sauce until thickened, 3 min.

Thinly slice steak against grain & divide amoung plates. Top with sauce & parsley.
