Chop and slice all vegetables.
Heat oil in large frying pan.
Add onion, carrot and celery to hot oil and stir fry quickly for 1 minute.
Add cabbage, bean sprouts, and spinach. Stir through quickly, reduce heat to medium and cover for 2-3 minutes until spinach is wilted. Add a little water if needed to prevent sticking.
Add beans, rice, barley and soy sauce. Stir for 1 minute and recover. heat through over low heat, about 5 minutes.
