Sweet Potato Soup

3  cups		mashed sweet potato
1/2		large onion, diced
2		cloves garlic,s minced
3  tablespoons		olive oil
2		carrots diced
1		celery stalk, chopped
6  cups		veg stock, low sodium
1  tablespoon		ginger
2  teaspoons		cinnamon
1  teaspoon		nutmeg
1/2  teaspoon		pepper
3  tablespoons		maple syrup

Put oil in dutch oven pot and add all veg and sweet potatoes if raw or you can cook them and mash.
Stir veg for a few min till translucent.
Add spices and stir for another min.
Add stock and maple syrup and cook till desired doneness, around 10 min.
Let cool and add 2 cups at a time to blender, blend till smooth. Be careful if the soup is hot, it will be dangerous to blend. Leave the top a bit ajar with your hand on it to let the steam escape.
