2/3  cup
1/3  cup
1  dash
1  teaspoon
1  teaspoon
1/2  cup

peel and grate potatoes
chop ham
finely chop scallions and parsley
Toss potatoes, ham, scallions, parsley, flour, salt and pepper in large bowl
In a seperate bowl, beat eggs with dijon.
Mix together with potato mix
Heat 2 tbsp oil in large skillet, on med-high heat
Add 1/3 cup mix at a time - flattening into rounds.
Lower heat to med. and cook 3 min each side til golden.
Add 2 tbsp oil between each batch.
