Rinse pork and pat dry. Cut pork into pieces, then mix with 1/2 of the soy sauce. Peel onion and cut into strips. Rinse, stem, and seed bell peppers, then slice into strips. Drain pineapple juice into 1 cup measure and add enough water to make 2/3 cup. Stir in remaining soy sauce, catsup, cornstarch, sugar, vinegar and cayenne pepper. Add 1/2 tsp oil into frying pan and cook onion, bell pepper, ginger and garlic until tender. Remove from pan. Add 1 tsp oil to frying pan and brown pork, then add back vegetable mixture. Add pineapple juice mixture to pan. Stir until thickened and add salt to taste. Serve over rice.
