Cut tofu into triangles.
In small saucepan over medium heat, combine soy sauce, juice, vinegar, honey, ketchup, garlic and pepper flakes. Bring to a simmer and reduce head. Add cornstarch (dissolve in 1 tbsp water) and stir until sauce thickens, about 1 minute. Set aside.
Heat oil in wok and pan fry tofu until all sides are golden brown. Set aside.
In same wok, stir fry veggies (all but the green ends of the bok choy and the green onions) with 1-2 tbsp water. After 2 minutes, add in leafy greens and green onions. Add tofu and sauce. Stir to distribute sauce throughout evenly.
