Directions:

In a large mixing bowl combine the flour, oats and cranberries (raisins or similar)

In a blender, mix the tofu, eggs, oil, honey, cinnamon, salt, baking powder and baking soda.

Pour the blended ingredients into the flour mixture and stir well.

Fill the muffin tins two-thirds full. Bake at 425 degrees for 12 - 15 minutes.
