Using heavy-duty foil, line bottom and sides of slow cooker, making a nest at bottom. In skillet, brown ground beef. Drain.

In large mixing bowl, combine enchilada sauce mix, tomato sauce, salt and water. Stir in onion and olives. Add ground beef. Spoon small layer of ground beef mixture on bottom. Cover with 1 tortilla. Repeat layering, ending with ground beef mixture. Cover and cook for 4 to 6 hours on low. Sprinkle cheese on top. Cook for 5 minutes, or until cheese is melted. Picking up sides of foil liner, lift tortilla pie out of slow cooker and into serving dish. Cut into wedges to serve.
