1In a food processor, combine chipotle peppers, sour cream and milk;
process until peppers have been finely chopped.
2Pour mixture through a sieve; set aside.
3Brush a large nonstick skillet with butter or oil.
4Place skillet over medium heat.
5Add sausage, bacon and potatoes; heat 30 seconds.
6Add eggs; cook until almost done.
7Add salsa fresca; continue cooking until eggs are done.
8Butter one side of the flour tortilla.
9Add egg mixture and jack cheese to tortilla fold over to crisp up.
10Cook tortilla on each side until crisp.
11Serve with sour cream mixture.
