Preheat the oven to 350 F. Mist a 9x5 inch loaf pan with olive oil

Combine the eggs, beans, spices in a bowl. Add the oats, meat, onion, corn, bell pepper, and 1/2 cup of the tomatoes. Mix with hands and press into the pan. Top with remaining tomato sauce.

Bake uncovered for 1 1/4 hours or until meat loaf is firm to the touch and pulls away from sides of the pan.

Arrange the salad ingredients on plates

Cut the meat loaf into 8 slices and add to plates.
