Ingredients:  Makes 6 servings (6 cups)

Peel and slice cucumbers and scallions.

Chop parsley and cilantro leaves.

Combine sauce ingredients (last 5 ingredients).

Combine veges and sauce in a container with a tight-fitting lid.

Shake to combine.

Refrigerate at least an hour before serving, shaking several times to coat veges with sauce.
Variations: omit curry; add fresh basil leaves instead of cilantro; add some crumbled feta cheese.
