In a large skillet, heat half of the oil over high heat. Toast corn for 5 minutes; season with salt.. Set corn aside.

Heat remaining oil; add onions and cook 5 minutes. Add garlic; cook 1 minute. Add tomatoes; cook 10 minutes. Add zucchini; cook 10 minutes. Add corn, beans, oregano, and pepper; cook 3 minutes.

Divide mix between tortillas. Top each with salsa and cheese.
