Ingredients:  Makes 16 servings (8 cups)

Peel and wash the tomatillos. Put in water and bring to a boil and simmer for about 10 minutes or starting to burst.
Dry roast 5 garlic cloves till lightly browned and soft.
Put cut onion, jalapenos, cilantro, roasted garlic and lime juice in blender or food processor.
Pulse till mixed.
Slowly add tomatillos two at a time and blend to desired consistancy.
Add salt and pepper to taste.
