Preheat oven to 425 degrees. In a skillet, heat olive oil over medium-high heat. Add garlic and onions; cook 3 minutes. Add diced tomatoes, lower heat, and simmer for 8 minutes.
Remove from heat. Stir in shrimp, cheese, salt, pepper, and herbs. Transfer pan to oven; bake for 12 minutes. Season with salt and pepper. Serve with bread or over rice.
