Cook pasta, drain and let cool

Dice veggies to the size you desire, 1/2 inch or smaller work best. Cucumber can be peeled or skin-on. Feel free to experiment with other veggies. It's a great way to use up whatever you have.

Mix together pasta, veggies and dressing

Add fresh mozzarella balls just before serving to keep them fresh. You can substitute any cheese here.

Refrigerate any leftovers. Mix well before serving after it has sat for awhile. You may also need to add a bit more dressing if it soaks up the initial batch of dressing.

Note: Serving size is 1 cup of dry pasta which is about 2 cups of cooked pasta.
