Description: This is extremely fresh tasting even with the tomatoes from the supermarket instead of the garden in the dead of winter January. Lime or Lemon juice fresh squeezed works well. Put your parsley in the freezer from the garden during the summer so you can pull it out in the winter. Made this for the first time over the weekend and everyone loved it!
Ingredients:  Makes 8 servings (8 cups)

Directions:  
Cook 1 1/2 cups of Farro in 4 cups of water with 2 tsps of Kosher Salt.

Keep on medium to low for 10-20 minutes until tender.
Rinse thoroughly once cooked.

Chop tomatoes up small along with sweet onions and parsley.

Add all to a bowl.

Whisk together the olive oil, lemon juice salt and pepper.

Serve room temperature.
