In a large skillet, heat butter over medium-high heat. Add apple, onion, and garlic; saute 5 minutes. Add broth and sage; bring to a boil. Stir in stuffing mix. Remove from heat; set aside.
Place turkey cutlets between sheets of plastic wrap. Pound to 1/4-inch thickness. Spread stuffing mix evenly over each cutlet, leaving a border around the edges. Roll up each cutlet and secure with a pick, Sprinkle rolls with salt and pepper.
Heat a large skillet over medium-high heat. Spray pan with cooking spray. Add rolls and saute for 3 minutes on each side. Cover, reduce heat, and cook for 10 more minutes.
Combine cranberry sauce and juice in a saucepan. Bring to a simmer; stir constantly. Serve sauce over rolls.
