Mince garlic. Heat the oil in a stock pot, add the leek, celery, garlic, and zucchini and sauté for 3-5 minutes. Add vegetable broth, canned tomatoes and beans to soup pot. Cover, bring to a boil, reduce heat and simmer for 8 - 10 minutes. Add baby spinach and heat until just wilted, or about 2 minutes.
Season with salt and pepper if desired and spoon into bowls to serve.
