Directions:  
pre-heat oven to 425
spray 9x11 backing dish with non-stick spray
mix 1 can of red enchilada sauce and 1 can tomato soup in a bowl
set aside 1 1/2 cups to use on top.
take 1 tortilla, spread on a spoonful of beans, a spoon of crumbles (un-beef), a spoon of sauce a pinch of cheese and a spoon of sour cream.
roll it up and place it in a baking dish.
repeat 11 more times.
top with the sauce you set aside and any remaining cheese
cover with foil and back 20 to 25 minutes until bubbling.
take off foil and back an additional 5 minutes or until cheese starts to brown.
remove from oven and let sit for 5 to 10 minutes.
serve with a dollop of sour cream
