Preheat oven to 400 degrees. Poke several holes in potatoes with a fork. Baked for 35 minutes. Cool a bit and peel. Transfer to a food processor. Puree until pretty smooth.

In a saucepan, combine the cream, butter, vanilla bean, and seeds. Bring to a simmer. Remove the vanilla bean. With processor on, add cream to the potatoes. Process until smooth. Season with salt and pepper. Serve.
