Directions:  
Melt 2 tbsp butter in small saucepan.
Add the diced shallots, and cook until translucent.
Add white wine and scrape the seeds from one vanilla bean into sauce. Whisk until evenly mixed. Allow to simmer until mixture reduces to 3 tbsp.
Remove sauce from heat and add 1/2 tsp vanilla extract and remaining butter. Whisk until it is melted and the sauce thickens.
Strain sauce into a clean container, forcing vanilla and shallots through . Keep warm.
