In a large saucepan on medium-high heat, saute onions in oil until translucent. Add garlic, cinnamon, tumeric, pepper, ginger and salt. Saute 1-2 minutes, stirring often to avoid sticking. Add carrots, chickpeas, lentils, rice and water. Bring to a boil, reduce heat. Cover with lid and simmer 15-20 mintues or until rice is cooked. Turn off heat, stir in tomatoes, peas, and mint. Let stand 5 minutes. 6- 1and 1/2 Cup servings.
