Directions:

In a stock pot, saute onions and garlic with the olive oil.

After onions soften, add the the broccoli, red pepper and corn mix. Let cook for about 3 - 5 minutes. Stir occasionally.

Add broth (water and bullion), beans (1 can), parsley, cayenne and thyme. Let cook for about 10 -15 minutes.

Use food processor to blend remaing can of beans plus 2 cups of hot soup.

After blend, add mixture back to the stock pot.

Add spinach

Heat until warmed through.
