chop all of the vegetables

heat olive oil- tiny amount in a small fry pan

put in onions on medium heat and stir occassionally

add carrots, stir for 3 minutes

add mushrooms and greens and stir for 3 minutes

set aside vegetables.

beat one egg, until frothy

In small fry pan put in egg, tilte fry pan so egg spreads out thinly, lift sides and tilt, letting the loose egg meet the heat of the pan. When egg is nearly done add the vegetables to one half the egg and flip the egg over.

Place on serving plate and serve with 1 tbs salsa
