Ingredients:  Makes 6 servings

Peel and julienne sweet potatoes.
Julienne zucchini and yellow squash.
Dice up Onion and red pepper.
Mix all veggies together well.
Mince garlic into mixed veggies.
Mix veggies and garlic together well and place into a 9 x 13 pan.
Cook and crumble turkey sausage.
Drain fat from turkey sausage and pat with paper towel to remove as much excess fat as possible.
Add crumbled turkey sausage to top of veggies in pan.
Mix together eggs and milk together in blender.
Pour egg mixture over veggies and meat mixture.
Top with cheese.
Bake in 350 degree oven until top is until golden brown or until a knife stuck in the middle comes out clean.
Cut into 6 wedges and serve.
