Description: Sautéed veggies and eggs baked into a fritatta
Ingredients:  Makes 8 servings (8 pieces)
1  cup
1  cup
10  ounces
10  ounces
1/4  cup
1/2  cup
1  dash
1  pinch
1  teaspoon
1  teaspoon
2  tablespoons

Beat eggs and cream and set aside
Add olive oil to pan and heat
Add onion and pepper and cook on medium high heat for 5 minutes
add mushrooms and cook until they release juice
add bag of baby spinach and sautee
add salt, pepper, and sage to taste cook 3 minutes
transfer veggies into glass baking dish
crumble feta on top
pour eggs over veggies and stir so all is evenly distributed
sprinkle paprika over top
bake at 375 degrees for 40 minutes or until eggs are firm.
Let rest 10 minutes before serving
